Hi guys! So this is my first post on the new blog. So my other blog on blog.com isn’t working, not sure why. But I made a new one so I can start new! (It’s okay, I only had one post anyway haha).
So these are the first granola bars I have ever made. And they were… DELICIOUS! I think me and my family finished them within oh… 3 days?
These are addictive. So addictive you can’t eat one, so addictive you can’t eat two. So addictive that you’ll want to take the whole tray of granola bars into a secret island miles away from civilization and surround it with fire-breathing dragons.
By the way, this may seem like a laundry-list of ingredients, but trust me, this recipe is extremely easy.
Healthy Granola Bars Recipe
- 2 cups oats
- 1/2 cup shredded coconut
- 1/2 cup almonds, sunflower seeds, or other nut/seed
- 1/2 cup flax seed
- 3 tbsp coconut oil
- 1/2 cup honey (agave or maple syrup will also work)
- 1/4 cup brown sugar
- 1 1/2 tsp vanilla extract
- pinch of salt
- optional: toppings of choice (I used chopped dates, you could use chocolate chips, raisins, apricots, prunes, etc.)
Preheat oven to 350 degrees. Put first 4 ingredients together in a cookie sheet. No need to line or grease. Bake for 10 minutes.
Heat the rest of the ingredients, except for the toppings, in a small saucepan on medium until it boils.
Once the oats are done, Pour it into a large bowl. Then pour the syrup mixture into the oats and mix with a spatula. Then mix in your toppings.
Lower oven temperature to 300 degrees.
Line a baking pan with parchment paper and grease the sides with coconut oil. Pour in the granola mixture and press down hard. An easy way to do it is to put a piece of parchment paper on top of the granola and press on it with a smaller baking pan. Bake for 20 minutes. Cool completely and then cut into bars or squares.
