Almond Joys!

How many of you went Trick or Treating on Thursday (or just bought a whole bag of candy and ate it by yourself)? Me: Neither. No candy in the house… oh well. So I decided to make my own. Yesterday after seeing everyone eating candy I needed a fix.

My favorite candy is Almond Joy. Until a few years ago I hated them. I hated anything coconut (whuuu?) It’s true. I still don’t like raw coconut and just shredded coconut by itself but now I like coconut with chocolate, peanut butter, and I absolutely LOVE to put them in my raw bites (which I’ll be posting more recipes for soon!)

Making these Almond Joys are surprisingly easy and requires only 5 ingredients. What’s stopping you from making these??? (Hint: MAKE THEM RIGHT NOW)IMG_1267

Aaaand these are way healthier than the original (not to be a party pooper or anything) but seriously! They are way healthier and taste so much better.

To make the shapes for the coconut you can roll them up into balls, make them sausage-shaped, cookie cutters, ice cube trays work great if you have them, I used this brownie pan that makes them into 1-in. squares.

These made 19 squares and you can easily double the recipe for a party.

Almond Joys Recipe

  • 1.5 cups sweetened or unsweetened shredded coconut
  • 1.5 tbsp agave (maple syrup or honey will work too)
  • 3 tbsp melted coconut oil
  • 1 cup dark chocolate chips or broken up chocolate bar
  • Almonds

Melt the coconut oil. Blend the coconut, agave, and coconut oil in a food processor and pour spoonfuls in molds or shape with hands. Place in freezer (Because the filling has coconut oil it will freeze pretty fast).

While the filling is in the freezer, start melting your chocolate. I like to use a double-boiler, where you heat a little bit of water in a pot and place a bowl over. This prevents the chocolate from burning. You can also microwave the chocolate with 30 second intervals, and stir every 30 seconds.

When the water begins to simmer, place a bowl over with 1/2 cup of the chocolate. Stir frequently so it melts evenly. Once the chocolate is super smooth, take the bowl off the heat (wear oven gloves because the bowl will get very hot) and stir in the rest of the chocolate chips. This tempers the chocolate so you get a nice shiny hard coating that doesn’t really melt in your hands.

Now take the coconut out of the freezer and dip the bottom of each one in the chocolate and place on a sheet of parchment paper on a pan. Then with a spoon, spoon a little tiny dot of chocolate on each coconut and place an almond on the dot of chocolate (the dot acts as a glue so the almonds won’t fall off). Then take a spoonful of chocolate on pour it over each candy, smoothing it over with the back of the spoon. Place it in the freezer until ready to serve! Enjoy!

I really like Snickers, Almond Joys (of course), Butterfingers, and Twix. But I mean, everyone likes Twix. And yes, I will be making homemade versions of these soon so I am pretty excited! 😀
