Pumpkin Pie Spice Pumpkin Seed Clusters


Yep, it’s pumpkin season. I’m pretty sure I’m a little late, aren’t I? Oh well, these little clusters take the cake! Pumpkin Pie Spice and pumpkin seeds, whaaa? These clusters are super easy to make, just takes ten minutes of your sweet time. You can make your own pumpkin pie spice (with the recipe below) or use a store-brought brand, both will work perfectly well. IMG_2075

So, whether you call these pepitas or pumpkin seeds, I’m sure you’re gonna love these either way. 😀

These pumpkin seed clusters are highly addictive (but they’re secretly healthy). Pumpkin seeds are one of the highest protein leveled seeds and have so many benefits, so you can bet that this is a great snack to keep around. This is a super awesome snack to munch on through out the day as well as a topping for yogurt, salads, baked on breads, mixed into granola bars, anything!

  • 1 cup pumpkin seeds
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1 tsp nutmeg
  • 1 tsp ground cloves
  • 1 tbsp brown sugar (optional, but does add a thanksgiving-esque flavor)
  •  1/4 cup honey

In a small pot, over medium-low heat, melt the honey. Once the honey is melted add the spices and brown sugar. Lastly, add the pumpkin seeds. Stir everything together so all the pumpkin seeds are coated evenly. Stir often for about 2 minutes, or until the mixture gets a little browned. On a lined plate or pan, pour the mixture so they are evenly distributed. Leave out for a few hours to cool. You can also leave these in the fridge for a few hours or overnight if you have the time to let them harden completely. Once cooled, peel off the pumpkin seeds and break into clusters.
